The components of the oven are built in refractory vibrated material containing a high density of aluminium ensuring a high thermal stability. 
The cooking surface is either a single piece of 80 mm or 5 wedges of 60 mm in height. 
All models are prepared for the installation of our gas burners. 

DOME 
The curvature of the spherical vault is perfectly rounded and allows an aerodynamic path of the fumes. The height is of 44 cm from the cooking surface. 
The dome rests externally of the cooking surface.

SILL 
Sill depths of 35cm 

UPPER INSULATION 
The insulation is performed with heat resistant ceramic fibre up to 1,400 ° C with a minimum thickness of 20 cm. 
LOWER INSULATION 
We use two types of isolation with the total of less than 12 cm. 
Under the cooking surface the temperature is about 25-30 ° C, to obtain considerable energy savings.
